Raw Coconut Rough

This afternoon I was having a massive craving for coconut rough! So here is my healthy alternative to coconut rough; gluten, dairy and refined sugar free.

What you'll need:

1 cup shredded coconut

1 cup hazelnut or almond meal

1 dessert spoon of vegan protein powder

1/4 cup rice malt syrup (or maple syrup/honey)

1/2 cup melted coconut oil

2 tablespoon raw cacao powder

1 teaspoon vanilla essence

Add another tablespoon of melted coconut oil if mixture is too dry, and if you prefer if sweeter add extra rice malt syrup.


  1. Combine all ingredients in a blender.
  2. Spread out evenly into lined baking pan, refrigerate for 30mins or freeze for 15mins.
  3. Cut into bite size pieces and enjoy!

My version of raw zucchini pasta

So simple, yet so tasty! The perfect healthy option for a lite lunch or dinner side. I made this up as I went so don't have the exact recipe but here is how I made it:

What you'll need

 2 zucchinis

8 fresh basil leaves

1 clove garlic (chopped coarsely)

Handful of rocket

Handful of baby spinach

A few stalks of fresh parsley

1 tablespoon nut butter (I used a mix of brazil, almond & cashew butter)

1 dessert spoon of olive oil



Put zucchini through a vegetable spiralizer, if you don't own one, you can use a box grater (turned on the side) to the largest side and grate zucchini in long strands.


For the sauce

Blend basil, garlic, rocket, spinach, parsley and nut butter. Once combined, stir in olive oil. Mix the sauce with the zucchini and your done!


Easy Raw Chocolate


Here is a basic recipe to make raw chocolate! I have used coconut oil but another alternative is cacao butter (can be quite expensive).


3/4 cup coconut oil

3/4 cup agave syrup (preferably) or rice malt syrup

1 cup raw cacao powder

Optional: 1/2 teaspoon vanilla extract or vanilla bean

You can add your choice of fruit and nuts, I have found that hazelnuts, walnuts and pistachios work best. You can also add fruit such as berries and mango, then freeze as a slice & cut up and serve into small pieces.


Mix all ingredients together, pour into moulds then place in fridge or freezer to set.
